Chocolate Avocado Mousse

Out of all the amazing things we can do with an avocado, who would've ever thought to make a chocolatey dessert out of the stuff? I mean why not? When blended, avocados provide a light, thick, creamy texture to whatever they are blended with! This recipe was inspired by my dad, who is a raw vegan chef and comes up with some killer dishes in the kitchen, and my older sister, who loves to make chocolate covered strawberries every Valentine's Day

My favorite thing about this chocolate avocado mousse is that you can eat it guilt-free whenever! It's full of healthy essential fatty acids from the avocado and chock-full of antioxidants from the cacao, as well as healthy, low glycemic all natural simple carbs from the dates. You can customize the sweetness level and even the chocolate level by adding more of certain ingredients. Don't have any cacao handy? Unsweetened cocoa powder makes a delicious substitute. Got some chocolate flavored plant based protein in the cupboard? Well go ahead and sub that in and have your mousse with some fruit for an amazing post workout snack! The sky's the limit whenever there's chocolate involved!

My favorite way to enjoy this is as a coating for chocolate covered strawberries, with just a sprinkle of coconut and raw nuts added!

Ingredients

  • 1/2 Large, Ripe Avocado
  • 3 TBSP Raw Cacao Powder 
  • 1/3 C Unsweetened Almond Milk
  • 1 TSP Vanilla Extract
  • 4 Dates (soaked overnight) or 2 TSP Organic Raw Honey

Prep Add all ingredients into a blender or food processor. Mix until creamy!

Serve As a dessert on its own, or as a delightful dip for some fresh fruit. Don't forget the toppings!
