Dark Chocolate Almond Butter Cups
Chocolate...one of the healthiest foods on the planet? Perhaps it is if you're referring to its cacao bean roots.
Consumption of dark chocolate has long been studied and attributed to boosting mood and mental health. Why is that? Natural cacao contains traces of tryptophan, which is critical for the production of our primary neurotransmitter serotonin. This may explain why many of us crave chocolate when we are feeling down and in need of a mood booster!
You can consume cacao in many forms like powder & raw nibs to get the best benefits. But if you're looking for a healthy treat to satisfy sweet cravings and elevate your mood, you've got to make these 3 ingredient almond butter cups. It’s so easy to make a bunch of these at once, and store them in your fridge or freezer for a sweet and convenient treat!
3.5 oz Dark Chocolate Bar (aim for 70% and up cacao)
2 Tbsp Coconut Oil
2-3 Tbsp Nut Butter
Optional: Pink Himalayan Sea Salt
Heat coconut oil on low heat in a small pot or pan.
Break chocolate bar into chunks and add to the melted coconut oil. Heat the mixture on low, slowly stirring to make sure the chocolate doesn’t stick to the pan.
Once all chocolate is melted, carefully spoon about 1 tsp of melted mixture into each pastry cup. Then add a small drizzle of nut butter to each cup. Finally, top each cup with another tsp of melted chocolate. Optional, if your diet allows for extra salt, top the chocolate with a few sea salt crystals.
Place in the fridge or freezer for 10-15 minutes until the chocolate hardens, then enjoy! If you like the nut butter to ooze out once you bite into the chocolate, store these in the fridge. If you like a chewier texture, store these in the freezer. They can last and be consumed up to a week!
