Savory & Sweet PotaToast
Zucchini, Cauliflower, and Sweet Potatoes.
What do these vegetables have in common? Well, besides having an abundance of nutrients to offer our bodies, they also provide the perfect blank canvas for low carb dishes. Zucchini can be cut into chips, spiraled into spaghetti, and sliced into lasagna noodles. Cauliflower makes a great substitute for rice, pizza crust, and chicken wings. And as I’ve recently discovered, sweet potatoes are the absolute perfect blank canvas for a grain free loaded toast recipe!
Keep scrolling for a few of my favorite sweet & savory versions of Sweet PotaToast! To start, simply slice a large sweet potato into 1/2 inch thick slices and rub with a small amount of coconut oil. Bake at 400 degrees for 10 minutes each side. The sweet potato slices should be tender, but not too soft, as to avoid sogginess when you add your favorite toppings!
Version #1: Avocado Sweet PotaToast
aka the Perfect Snack!
Season half of a mashed avocado with black pepper, lemon juice, and sea salt. Spoon on top of a slice of sweet potatoast and top with crushed red pepper flakes.
Version #2: Scrambled Tofu Sweet PotaToast
aka the Protein Packed Breakfast!
Heat a non-stick skillet and add a small amount of coconut oil. Toss a handful of chopped spinach, tomatoes, and crumbled tofu into into the pan. Season with garlic powder, turmeric, black pepper, and paprika. Serve hot, piled onto a slice of sweet potatoast.
Version #3: Almond Butter & Jelly Sweet PotaToast
aka the Guilt Free Dessert!
Smother a slice of sweet potatoast with your favorite nut butter. Top with a handful of smashed berries and a sprinkle of hemp hearts.
