Salted Caramel Superfood Truffles
I am definitely a morning person!
I love to naturally wake up with the sun and can easily crank out a gym workout in a fasted state, meaning without having anything to eat beforehand. Recently, a new job has required me to switch my gym sessions to the evenings. While it’s great to go to bed completely exhausted (I definitely sleep a little better), transitioning between work mindset and workout mindset is a challenge in itself. On the drive home, I usually get a little hungry and unlike my morning workouts, I definitely need a little sum’n sum’n in my stomach before hitting the weights
However, eating before a workout can be very tricky. Too much of the wrong types of food can leave you too full to be motivated to workout, can be too hard to digest making you become nauseous mid-workout, or can leave you lacking of stamina because the food you’ve consumed requires energy to digest properly. If a nutrition background has taught me one thing, it’s that simple carbohydrates are the way to go for a boost of quick energy immediately before workout. The most basic real food example would be fruit sources that provide simple sugars and don’t require a lot of energy from the body to break down!
Now what if we could take a basic fruit, a dried date for example, and transform it into a sweet treat that's basically a pre-workout reward?! Yesss you can have your cake (or Salted Caramel Superfood Truffle) and eat it too. Consume 1-2 of these bad boys 20 min prior to a workout and you should be ready for lift off! And you guessed it, these sweet treats can also serve has a healthy breakfast, dessert, or anytime snack that is totally guilt free and great for your body!
12 Dates, soaked until plump and seeds are easily removed
1/4 C Raw Almonds
1 Tbsp Cacao Powder
3 Tsp Maca Powder
Sea Salt (a few grinds should do the trick)
Optional Toppings: Cacao Powder, Shredded Coconut, Goji Berries
Toss all of the superfood truffle ingredients into a food processor. Puree until all the ingredients are blended together. Totally cool if the almonds are still chunky. No food processor? You can also use a blender just to blend the dates then mix all the other ingredients by hand, but you may have to use a touch of water to break down the skin of the dates.
Spoon a teaspoon of the truffle mixture into the palm of your hand and gently roll it into a ball shape.
Dust the truffle with some extra cacao, coconut shreds, goji berries, or any other healthy toppings you have in your kitchen!
Store refrigerated and consume within about 7 days.
